From celebrity wedding masterpieces to illusion cakes, Lauren Kitchens can bake anything


For Lauren Kitchen, TonHis interest in piping bags used by Channel 13 pastry chefs grew from an early age, and his business thrived. Kitchens made a bundt cake for her high school senior friend and immediately connected with the pride in creating something. Makes her friends happy, even if she admits that the cake isn’t great. She continued to make cakes throughout college.

“I can’t stop making cakes,” she said. “Like I was bitten.”

The kitchen bakes a variety of cakes and distributes them to her classmates. Through word of mouth, she started making cakes, even wedding cakes.

After college, Kitchens rented her parents’ kitchen for $200 a month while working part-time in a bakery. Finally, in 2002, Lauren’s Fancy Cakes opened and Kitchens entered the wedding industry.

“It’s the only thing that’s going on consistently throughout the year (wedding season),” she said. “It’s the only place where I can consistently make big cakes. So I thought, well, I’m in the wedding business.”

In 2008, Kitchens was invited to appear in Food Network Challenge, the first televised cake baking competition. She was reluctant at first, doubting her skills, but she won multiple episodes of the show.

“Nothing changes your art form like competition. Nothing,” she said. “Because you want to be better than the people around you. You want to be better than the cake you brought last time.”

For the first decade of her business, Kitchens said, the groom’s cake was all chocolate and strawberries. But now, she’s creating all kinds of surreal cakes, everything from dogs to stadiums.

“Making these groomsmen cakes sets me apart,” says Kitchens. She even encouraged the bride to plan the groom’s cake as a surprise.

Her clients include high profile clients such as Gwen Stefani and Blake Shelton. Their five-tier wedding cake was inspired by the cake Stefani’s parents made at their ceremony.

Her business more than doubled in 2021 when people began to gather again. Today, Fancy Cakes has over 1,000 customers a year. She said 2023 is fully booked and weddings are getting bigger.

“If I had been an artist first, I would have succumbed to that pressure,” she said.

While Kitchens has a team of four bakers, it’s still not enough. She had to turn away clients simply because there wasn’t enough space or staff to take on more work without sacrificing quality. Fortunately, expansion is underway. Kitchens have purchased the space next door and will go through the walls to get more kitchen space and add a couple of cake decorators. They hope the new kitchen will be operational by the end of the year.

Her favorite part of the cake baking experience is working with clients to conceive the finished product. Working with brides isn’t easy, but it’s rewarding.

“It’s an emotional purchase. If you’re not paying attention to the pressure customers are feeling, you’re not going to resonate,” Kitchens said. “If I could sell and connect with my bride and my supplier team – it’s more fun for me than actually making cakes – and I love making cakes, so that says a lot.”

During the planning process, Kitchens drew inspiration from wedding invitations, gowns, and everything else that accompanies a couple’s big day. At one point, she even copied the design of a bride’s imported Italian tableware.

“It’s interesting to see the stories come together,” she said. “The budget doesn’t matter. Everyone has a story. I love relationships. I want you to be the center of attention, not the center of attention.”
